Banana Bread Muffins

The tried and true Banana Bread Recipe also works as yummy breakfast muffins. Here is how to adjust the recipe for a large batch of Banana Bread Muffins with Cinnamon Crumble.

Banana Bread Muffins

Adjusted "Banana Bread with a Healthy Twist" recipe for a large batch of muffins

 

YIELD

 20-22 muffins

 

INGREDIENTS
  • Muffins
    • 6 ripe bananas (peeled)

    • 1 cup cane sugar OR 1 cup coconut sugar

    • 2 eggs

    • 2 tsp vanilla extract

    • 2 tsp cinnamon

    • 3 cups all purpose flour OR 2 cup of stone ground whole wheat

    • 2 tsp baking soda

    • 2 pinch salt

    • 2/3 cup melted unsalted butter

  • Crumble (optional)
    • 1/3 cup brown sugar

    • 2 tbsp all purpose flour

    • 1/8 tsp cinnamon

    • 1 tbsp softened butter

INSTRUCTIONS
  1. Preheat the oven to 350F

  2. Prepare 20-22 cupcake/muffin tin with paper liners

  3. Cream ripe bananas in a stand mixer with the paddle attachment

  4. Add sugar and mix until combined

  5. While the mixer is stirring, add eggs, vanilla, and cinnamon

  6. Add flour, baking soda, pinch of salt

  7. Pour in melted butter and turn the mixer off when combined

  8. Spoon about 1/4 cup of batter into prepared muffin cups

  9. Prepare crumble (optional)

  10. In a small bowl mix together brown sugar, four and cinnamon

  11. Cut in butter until mixture resembles a course meal consistency

  12. Sprinkle topping over muffins

  13. Bake muffins for 18-20 minutes or check by inserting a skewer or toothpick. They are done when the skewer comes out clean.

Recipes are never rules!

Use your judgment; if you've made it before and it has worked by shaking not stirring, try it! If the recipe says something will brown after 12 minutes in the oven and your's hasn't browned yet, leave it until you think its brown enough.

Taste, taste, taste!

Any good chef will tell you to taste your food multiple times as you cook. Stick your spoon in and see if it tastes good. Is your food seasoned well? Can it use more salt or pepper? Would you like it if it were a bit sweeter? Everyone's palate is different, if you think it needs something; Go for it!
