Banana Bread Muffins
The tried and true Banana Bread Recipe also works as yummy breakfast muffins. Here is how to adjust the recipe for a large batch of Banana Bread Muffins with Cinnamon Crumble.

Banana Bread Muffins
Adjusted "Banana Bread with a Healthy Twist" recipe for a large batch of muffins
YIELD
20-22 muffins
INGREDIENTS
Muffins
6 ripe bananas (peeled)
1 cup cane sugar OR 1 cup coconut sugar
2 eggs
2 tsp vanilla extract
2 tsp cinnamon
3 cups all purpose flour OR 2 cup of stone ground whole wheat
2 tsp baking soda
2 pinch salt
2/3 cup melted unsalted butter
Crumble (optional)
1/3 cup brown sugar
2 tbsp all purpose flour
1/8 tsp cinnamon
1 tbsp softened butter
INSTRUCTIONS
Preheat the oven to 350F
Prepare 20-22 cupcake/muffin tin with paper liners
Cream ripe bananas in a stand mixer with the paddle attachment
Add sugar and mix until combined
While the mixer is stirring, add eggs, vanilla, and cinnamon
Add flour, baking soda, pinch of salt
Pour in melted butter and turn the mixer off when combined
Spoon about 1/4 cup of batter into prepared muffin cups
Prepare crumble (optional)
In a small bowl mix together brown sugar, four and cinnamon
Cut in butter until mixture resembles a course meal consistency
Sprinkle topping over muffins
Bake muffins for 18-20 minutes or check by inserting a skewer or toothpick. They are done when the skewer comes out clean.
