Peaches and Cream Dream Jar

In case you haven't noticed, I love using left overs to make something new. Sean often complains that he is the only one who eats leftovers in our house. Hes wrong... Ill always eat left over risotto, mac and cheese, pizza, do you see the pattern here? If its covered in cheese it's totally worth eating again. Otherwise I am generally on to the next craving by the next day. Cake is no exception to this rule.

Peaches and Cream Dream Jar

This recipe is made from my Famous Apartment Pound Cake, which I often have in the house. You can also feel free to use left over cinnamon roll birthday cake, angel food cake, biscuits or any other cakes you have on hand. It's also got a juicy layer of peaches soaked in amaretto and luscious layers of fresh whipped cream. Can left overs get any better?

left over cake

Start by chopping up the left over cake and ripe peaches into small cubes. Then it was time for booze... pour some Amaretto or any of your favorite sweet liquor over the peaches and let them marinade in the fridge for at least 30 minutes. If you have some little kiddos involved this is totally optional. If you don't want to add the booze, stir in one tablespoon of sugar and let them marinade in it for the same amount of time.

Peaches soaked in amaretto

Next get going on some fresh whipped cream. Want a tip for speedy whipped cream? Always whip cream in a metal bowl with a metal whisk. Electric mixer will work best, but you can totally do this by hand with a large balloon whisk and some elbow grease. (no actual grease required.) (OK, I'll stop while I'm ahead.)

The key to fast and easy whipped cream is putting the metal bowl and whisk into the fridge to chill for two or three minutes before starting. It's so simple but it will really speed the process up and result in a better whipped cream ;)

Cold cream

When the peaches are nice and syrupy Your jar is ready for layering. You can make these in individual jars, you can make one large trifle, or you can even put the ingredients out in the center of the table and allow your guest to put it together themselves. Less work for you and its fun and interactive.

These leftovers will never go to waste.

Recipes are never rules!

Use your judgment; if you've made it before and it has worked by shaking not stirring, try it! If the recipe says something will brown after 12 minutes in the oven and your's hasn't browned yet, leave it until you think its brown enough.

Taste, taste, taste!

Any good chef will tell you to taste your food multiple times as you cook. Stick your spoon in and see if it tastes good. Is your food seasoned well? Can it use more salt or pepper? Would you like it if it were a bit sweeter? Everyone's palate is different, if you think it needs something; Go for it!

Its just food... so have some fun!
