There are so many ways to get your hands on these blooming spring Spruce Tips, you do not need to be hiking your way through the forest hunting for wild turkey while also keeping your eyes peeled for spruce trees, wild morels, and fields of ramps.

For my spruce tip salt this year, I was lucky enough to have a dwarf variety of spruce growing right in the front of our home, this worked out so I could pick about a cup of them and put them in the fridge and while in the woods for Spring Turkey Season I could pay more attention to game sign then attention to all the wild edibles calling to me. As I came across larger spruce trees with the classic spruce tip I shoved a few in my pocket and bagged them up when I got home. They last in a air tight container in the fridge for 2-3 weeks for anything you want to throw them in. Out favorite being Salmon Spruce Tips & Champagne.

Foraging for Spruce Tips is probably one of the easiest ways to get into a little bit of wild foods, without all the fear of picking the wrong thing. All conifer tree needles are edible (and a yummy addition to your typical kitchen herbs) besides for the Yew variety. All you need is:

Food processor or good blender

equal parts Spruce tips

and Salt

It's that simple.


Spruce Tip Salt

1 cup Spruce tips

1 cup Kosher Salt


1. In a food processor blend equal parts spruce tips and kosher salt for 1-2 minutes until well combined.

2. Store in an air tight container. (for up to 1 year)




Recipes are never rules!

Use your judgment; if you've made it before and it has worked by shaking not stirring, try it! If the recipe says something will brown after 12 minutes in the oven and your's hasn't browned yet, leave it until you think its brown enough. 



Taste, taste, taste!

Any good chef will tell you to taste your food multiple times as you cook. Stick your spoon in and see if it tastes good. Is your food seasoned well? Can it use more salt or pepper? Would you like it if it were a bit sweeter? Everyone's palate is different, if you think it needs something; Go for it!
